Usually by now we would have seen a nice amount of snow, but we have barely gotten a quarter of an inch.  But, I know that is bound to change.  I thought I would take a proactive approach and line up some fun wintry books and projects.

A look back at the oldies, but goodies of 2014.  Please feel free to pin anything you like, I would be flattered!





















I can't believe how fast the year has gone.  The children have grown so much and they are coming into their own.  I love to see the differences in personalities.  These budding young people have minds and feelings of their own, which is good...most of the time.

Our family relocated across the state, and it has been truly wonderful!  I have learned so much about myself, and the path that our family is to take.  It is freeing to know that God's laws are always better than man's laws.  There is a comfort and peace when we follow Him.

I wish you and yours all the best in the New Year!  I can't wait to see what wonderful things are right around the corner.  If you want to follow along with me join me!

Iced Pumpkin Spice Cookies


If you are looking for a yummy cookie... this one is for you.  Sweet, spicy, and pumpkiny (is that a word?) with a hint of citrus.  Whip up a batch or two for reading by the fire, or a family get-together.

Iced Pumpkin Spice Cookies

Cream together:

1/2  cup shortening
1  cup sugar
2  eggs, beaten
1  tsp vanilla
3/4  tsp orange zest

Mix together:

2  cups sifted all purpose flour
2  tsp baking powder
1  tsp salt
2 1/2  tsp cinnamon
1/2  tsp nutmeg

Combine creamed ingredients with dry.  Blend until smooth.  Drop onto a lightly greased cookie sheet. Bake until the bottoms are lightly browned at 350 degrees.

Once cool, combine the following to make the icing:

2  cups confectioners sugar
1  Tbsp orange juice
1/2  tsp vanilla

Place a small dollop on each cookie.

Simple and so good.  I hope you enjoy.

Apple Maple Breakfast Biscuits


Coming up with a delicious breakfast every morning can become a chore.  We could have cold cereal or oatmeal everyday, but honestly, I would get bored with that.

My oldest sons decided they would take matters into their own hands and make breakfast themselves.  My son Andrew came up with this recipe.  Wow, so good.  Warm, gooey and comforting.  This would also make a wonderful brunch or special occasion dish, too.  Maybe Christmas morning?

Apple Maple Breakfast Biscuits

For the biscuits:

1 tube of Grands Biscuits
cinnamon and sugar mixed
1 stick of melted butter

For the topping:

1 cups of rolled oats
1/2  tsp cinnamon
1/2 cup brown sugar
1/2 stick melted butter

2 apples peeled and cubed small
1/2 cup Maple syrup

Roll each biscuit in melted butter and then in the cinnamon sugar.  Place biscuits in a greased casserole dish.  Sprinkle on the diced apple.

Stir topping ingredients together and sprinkle on the biscuits.  Then drizzle maple syrup over everything.

Bake 20 minutes or bottoms are a golden brown.  Serve warm.  Hot, crispy bacon and some orange juice would be a perfect addition.

Enjoy.

Preserving Fresh Foods On A Budget



We all know that locally grown food is best for us, in so many ways.  I know that there have been many times have I fallen back on what is convenient, but not always what is best for my family.

As my family and I continue on the road to healthy eating, I have collected a few ideas.  Some of them we have tried, and others I have read or overheard at the Farmer's Market.  


1. Buy a bread maker.

Or you might be able to borrow that one from your friend that sits on a shelf collecting dust.

As I am writing this I can smell the honey whole wheat bread that baked while I was sleeping.
I dump the ingredients in before I go to bed and hit Start.  We wake up to the smell and taste of fresh homemade bread!  You can also use the bread maker to make jam.  It comes with a really nice recipe book.  There are also tons of recipes on Pinterest.  We have a KitchenAid Convection Bread maker.
My aunt gave it to us, and it has been a huge blessing.

2. Buy fresh produce.

Buying locally grown food does not have to be expensive!  Last Saturday I purchased: 13 ears of corn, 2 tomatoes, 5 zucchini, and a ton of green beans for $14.90, at a local market.

Maybe you like the idea of buying local, but you don't have $14.90.  Maybe you want to put back some healthy food for your family, but you don't see how you can buy fresh and pay the electric bill.

Have you tried:

* Bartering

Find a friend, neighbor, family member, that is growing something you would like to have.  For example you might have a knack for sewing.  Offer your talent or ability in exchange for the food.
You say, "I will whip up the curtains for you in exchange for some of your lovely tomatoes!"

Or maybe you just stocked your freezer with a side of beef.  You have a ton of hamburger, but no money left over for other good food.  Offer some of your hamburger for some of their produce.  You get the idea. Be creative, and just ask :)

* Farmers Markets

Go to the grower and ask them what they do with the food they don't sell at the market.  Ask if they would be willing to sell the remaining amount to you, at a discount price  Farmer's Markets are a great way to build relationships with others that are interested in a lot of the same things you are!

You can also get really wonderful baked goods, local honey, handmade soaps and lotions and so much more.

* Craigslist, Newspapers, etc.

Keep an eye out for locals selling their produce.  Often times gardeners are faced with a surplus, and they will sell it cheap, or give it away.  This is a good place to keep a lookout for free plants, as well.
We were able to get flats of free seedlings this Spring.  My husband saw the ad in the classifieds.

Two summers ago a local church had an ad in the newspaper.  Every Saturday they had tables set up of free produce for anyone!  Just show up!

* Keep A Look Out

Ever drive by a house or farm that have fruit trees brimming with fruit, and the next time you drive by it has all fallen to the ground neglected?  Walk on up to their front door, and politely ask if they aren't enjoying the fruit of their trees, can you?  It may just be a matter of the owner not having time to mess with it.  You could even offer to pick it and then split it with them.


Well now that your counters are brimming with all of your fresh produce, the odds you will be able to eat it all before it goes bad, are slim.  Letting it rot, not an option, especially after all the hard work to acquire it.  But, just like everything, preserving food can be expensive.  Here are a few ways to save money:

1. Just ask.

The odds of someone you know having canning jars, a water canner or a dehydrator are pretty good. It might be tucked away in the attic, but remember this kind of thing was done often for generations past.

Moms, Grandmas and Aunts can have a wealth of knowledge when it comes to food preservation.  They often times have all the tools, too.  I think unfortunately we bypass this treasure trove of information for something more glitzy.  But, you can't beat the knowledge of someone who lived through the great depression when it comes to stretching the family meal!

2. Thrift Stores, Garage Sales, Craigslist

One persons junk is another persons treasure.  Take advantage of it.

3. Look around your own house.

You can air dry herbs yourself or dehydrate fruits and vegetables in your oven.  I have even put some things out on the porch on really hot days to dehydrate.  Freezing can be a quick and easy method of preserving!


Running to the store and putting cans and boxes in your cart, can seem like the only option.  But, you can't beat scooping up a hand full of fresh berries and popping them in your mouth, or passing out fresh carrots to the Littles for a snack.

Fresh Strawberry Muffins


Berry picking, and buying, is in full swing here in Ohio.  We have had strawberries in the store for a month or so, but they are nothing like the fresh locally grown ones you can buy right now.

There are so many wonderful things to do with strawberries.
 I like to keep a bowl cleaned, chopped and mixed with a tablespoon or so of sugar.  We add them to yogurt or ice cream, drizzle them over angel food cake, or bake with them.  

I have used the recipe below for years.  I actually tore it out of a Martha Stewart magazine years ago.  I really haven't changed it much.  I always double the recipe, which will give you 24 nice size muffins.

Fresh Strawberry Muffins

Makes 12 Muffins

1 1/4 tbsp melted butter
1 3/4 cups all-purpose flour
1 tbsp baking powder
1 1/4 tsp cinnamon
1/4 tsp salt
1/2 tsp vanilla
2/3 cup sugar
2/3 cup milk
1 large egg
1 1/4 cup strawberries, chopped (any fruit can be used)

1. Preheat oven to 400 degrees.  Butter, or spray muffin tins.

2. Combine flour, baking powder, cinnamon, and salt in a large bowl; whisk to combine.

3. In a medium bowl, combine butter, vanilla, sugar, milk, and egg.  Fold butter mixture and fruit into flour mixture; don't over mix.

4. Spoon into muffin tins.  Bake until golden brown,  15 to 17 minutes.  

5. Serve warm or at room temperature.

Meal Planning For The Good Intentioned



It's Saturday morning. I sit with paper and pen, maybe a cookbook or two. It's meal planing time.  Ugh.


Remember the old cartoons with the devil on one shoulder and an angel on the other?  The picture above demonstrates my thoughts.

On one side is the processed food: quick, easy and generally unhealthy.  I am guaranteed that my kids will gobble it up...and be hungry 20 minutes later :)

Then there is my ideal: healthy, local, fresh and organic.  It generally has a shorter shelf life, often takes a bit more prep time, and I'm not guaranteed my kid will gobble it up.

Then there is my reality: a combination of the two.

Have I figured out the perfect formula? Nope.

I have weeks when we eat home cooked , healthy meals.  Then there are the weeks when we have a stack of empty pizza boxes near the trash can (the curse of having Little Caesar's hot and ready down the street).

Does this make me a bad mom? I don't think so.  Are there moms out there serving only healthy food to their children? You bet!

But, I don't have to compare myself to them.  God has not called us to perfection.

And whatsoever ye do, do it heartily, as to the Lord, and not unto men.  Colossians 3:23

As wives and mothers we all strive to give our best to our families.  Don't become discouraged about what you can't do.  Rejoice and focus on the good things.  Continue on in the journey, do the best you can, and give yourself some Grace!

He already has.

Fun In the Sun



Last week I was saying that "Spring has Sprung," but I think Summer is right around the corner!  The herbs in my garden are loving the heat.   I will have a huge supply of lavender this year.  I would like to make sachets for my drawers and to hang in the closets.

Have you ever had Lavender Lemonade?   I recently had some at a friends and it is so refreshing.   I found a recipe that looks wonderful, and I am anxious to give it a try.


We visited Litzenberg Park last Sunday.   They were baking lavender bread.   They used the leaves, not the buds.  It was unexpected and very good.  My family gave it a thumbs up!  What things do you like to do with lavender?



My children have spent the last few days in the kiddie pools in our back yard.  The perfect weather for getting out the garden hose.  Here are a few pictures.






I love geraniums in flower pots.  They just always seem to look just right.  I had a few leftover from my window boxes, so I tucked them into this little pot.  Very sweet.



Quick, Healthy Strawberry Bread


I love strawberries.  My family loves strawberries.  I have a sneaking suspicion that you like them as well.  We have 2 berry patches, and they are both really close to being turned into jam, bread, shortcake...


Whether you grow your own, head to your local farmer's market, or just the grocery store;  I would encourage you to try this recipe.

Strawberry Bread


3 cups flour                                                          1/2 cup honey
1 cup brown sugar                                                3 eggs
1 tsp salt                                                               1/2 cup coconut oil, or canola oil
1 tsp soda                                                             1/4 cup butter, melted
1 tsp cinnamon                                                     2 1/2 cups sliced strawberries, no juice

Preheat oven to 350 degrees.
Butter two 8x4 loaf pans.
Combine dry ingredients.  Set aside.
Combine honey, eggs, oil, and butter.  Fold in dry ingredients, then strawberries.
Spoon into loaf pans.
Bake for 1 hour.  Freezes well.
