Quick, Healthy Strawberry Bread


I love strawberries.  My family loves strawberries.  I have a sneaking suspicion that you like them as well.  We have 2 berry patches, and they are both really close to being turned into jam, bread, shortcake...


Whether you grow your own, head to your local farmer's market, or just the grocery store;  I would encourage you to try this recipe.

Strawberry Bread


3 cups flour                                                          1/2 cup honey
1 cup brown sugar                                                3 eggs
1 tsp salt                                                               1/2 cup coconut oil, or canola oil
1 tsp soda                                                             1/4 cup butter, melted
1 tsp cinnamon                                                     2 1/2 cups sliced strawberries, no juice

Preheat oven to 350 degrees.
Butter two 8x4 loaf pans.
Combine dry ingredients.  Set aside.
Combine honey, eggs, oil, and butter.  Fold in dry ingredients, then strawberries.
Spoon into loaf pans.
Bake for 1 hour.  Freezes well.
