Iced Pumpkin Spice Cookies


If you are looking for a yummy cookie... this one is for you.  Sweet, spicy, and pumpkiny (is that a word?) with a hint of citrus.  Whip up a batch or two for reading by the fire, or a family get-together.

Iced Pumpkin Spice Cookies

Cream together:

1/2  cup shortening
1  cup sugar
2  eggs, beaten
1  tsp vanilla
3/4  tsp orange zest

Mix together:

2  cups sifted all purpose flour
2  tsp baking powder
1  tsp salt
2 1/2  tsp cinnamon
1/2  tsp nutmeg

Combine creamed ingredients with dry.  Blend until smooth.  Drop onto a lightly greased cookie sheet. Bake until the bottoms are lightly browned at 350 degrees.

Once cool, combine the following to make the icing:

2  cups confectioners sugar
1  Tbsp orange juice
1/2  tsp vanilla

Place a small dollop on each cookie.

Simple and so good.  I hope you enjoy.
